Our nephew has started getting his bakery set up here in Surin. Named Starbeam Bakery. He is a professional baker and will be selling his wares in our restaurant and later elsewhere. Should be starting quite soon actually. At the moment I am doing my taste testing duties to ensure flavor and quality. :) Here's his Cherry Cheesecake. Will add more as it goes to show his wares.

Will bread be included? The type that's not laced with sugar?

Not sure yet how extensive he will be with his 'menu' of goods and wares. I will let you know though. We also want the English toast bread for our restaurant use. I'll be letting you all know here as I get an idea of what all he will be baking to sell. He is literally just getting it together the past couple/few days. I will have some input though. :)

I suggested to our nephew that he come up here rather than stay in Chonburi where there are still many businesses closed and/or barely doing well due to the virus and lack of any real tourism, and to set up his business here using our restaurant, it's name brand and recognition, along with the newer Starbeam Chinese Medicine acupuncture clinic just around the corner from us (where they are discussing possibly setting up a small stand out front selling Thai morning baked treats to the passers by and close by hospital staff, probably staffed for a couple hours in the mornings by his lady friend), to help start a new bakery business. We have a house across from us we rent for extra space that has bedrooms above and area below with our extra reefers, freezers, ovens, our old huge pizza oven, an excellent electric dough machine we no longer use, etc. His GF is from Buriram and will now stay with him here in Surin and work with him and they will stay in that opposite house. We are helping with some extra equipment and cooling racks and other needed hardware, and we believe it will be an added benefit for our customers as well providing some baked goods and desserts to add to our menu. We basically only do fruit pies for our desserts. This should be a whole new ball game adding some nice foods. We are certain our Thai and western customers will enjoy the extra choices for their meals/desserts.

He decided it sounded good and has followed my suggestions. He also now will be with his lady and they will work together to further their future. We all will benefit from his wonderful skills as a baker, and he is a wonderful man and my favorite guy in the family. A sweet guy. We'll see how it goes. Win/Win in my mind. My problem will be staying away from all the goodies. LOL

Some test bakes of the blueberry cheesecake (thought it was cherry at first) and some Thai baked goods for the Thais in the mornings (have to have him make some cheese and bacon ones). Want him to make me a sweet mango cheesecake as well to try out. The blueberry was delicious. A dough flattening machine is on order, so as to be able to do croissants and pie crusts and such. I'm hoping for some proper size fruit pies to sell slices or whole pies. I'd kill for a proper cherry pie. :) Or apple, blueberry, pumpkin, etc. These Thai bakes will be given as testers to our frequent Thai customers to see how they go over. There's more but I just took a few pics of some.

I wish you and the Starbeam team all the very best with your new venture. I must say the early tasters look delicious. For me, they would be bad news, but I am sure your other customers will really appreciate them.

Today's test delicacies. :) I need to stay far away from this stuff. 5555 Now to see if he can make plain donuts and krullers. Love those with my morning coffee when too lazy to make something. I love those little custard pies too. Chocolate covered and sugar donuts. And sausage roll type puffs.

Thanks Nomad and all for the well wishes. This sort of fell into my lap. I didn't think he would go for it, at least not as soon as he did. Should be good for the restaurant, our customers, the Thai customers at the road side stall that will be open in the mornings in front of Starbeam clinic, etc. Glad he decided to take the chance. He's a good kid and talented. He stayed with us for a couple years many years ago while going to school to be an auto/truck mechanic when he was young. Decided years ago he's rather be a baker than a mechanic. But he can help if my old pick up needs work as well. LOL

Yorky: He said this is a breakfast toast bread. Very low in sugar. I'll taste it in the morning tomorrow to ensure it is up to par.

That's great. But the next question is - hot dog rolls and burger buns (low sugar content). Nookie supplies excellent burger buns (but only once a fortnight) but not hot dog rolls.
